*Title: Process Control Specialist*
*Reports to: Production Manager*

*Essential Functions:* * Work with Production Manager on R&D projects in the Confectionery Department.
* Develop and maintain complete process documentation for each iteration, on each item in development with all pertinent information associated with each iteration, process steps, recipe values, order of addition of ingredients, times, temperatures, actual ingredients used, item descriptions and identifying numbers, vendor information, and some reference to the project number and “revision number”, along with the date produced and other comments, such as “mix until fully incorporated”, “run pan with air until product is no longer tacky”, etc.
The room condition (temperature and relative humidity) needs to be included, as well.
* For R&D projects, it is critical to keep a retain sample and that all Retain all R&D samples and ensure that they are marked with the R&D numbers, the date it was produced, the recipe used (with percentages spelled out), ingredients and item code numbers used (or some method of identifying new ingredients), the source of the ingredients (vendor, supplier, country of origin, etc), who made the sample and to whom was the sample given.
* Retain samples must be maintained in an organized fashion, accompanied by the aforementioned complete documentation, readily accessible for prompt retrieval.
* Establish and maintain formula and project files, process records, ingredient sources and identification numbers, and ingredient specifications used in development projects * Assist in and monitor scale up transition of process changes and/or new products from confectionery lab bench-top to processing equipment, including training where needed.
* Participate in process improvement initiatives and process problem solving efforts in the Confectionery Department.
* Organize and maintain the confectionery lab and work area, including control of ingredient inventories, identification and control of development retain samples, project status tracking, project / process records.
* Participate in new product development in the Confectionery Department, as required.
* Learn and understand each process operation in the Confectionery Department, including, but not limited to, chocolate tempering, melting, enrobing, panning (grossing & polishing), sugar panning (rainbow drops), cold table (hand made) applications, packaging, cleaning & sanitation, documentation/process reporting, food safety, and all department functions.
* Assist with activities of all Food Safety Programs, including HACCP, Allergen Control Plan, & GMP's, and maintain all documentation as current and up-to-date.
* Assist with HACCP and GMP audits to ensure compliance with Food Safety Programs as well as Customer and Third Party audits and inspections when necessary.
* Assist with actual and mock product recall exercises.
* Assist with customer questions and complaints.
* Comply with all regulatory requirements.
*Non-Essential Functions:* * Other duties as assigned.
*Education, Certifications and Licenses:* * BS in Food Science or equivalent required.
*Work Experience:* * Minimum of 2-3 years of related product development and quality control experience in the food manufacturing industry.
* Experience with food safety issues, HACCP, and GMP is required.
* Experience in the organic food industry preferred.
*Knowledge, Skills and Abilities:* * Ability to interact with marketing, sales, production, purchasing, and senior management, while documenting product feedback and formula revisions.
* Ability to understand and monitor regulatory issues regarding food and nutrition, as well as food labeling.
* Ability to work in industrial and kitchen lab environment with food allergens and taste all food products without prejudice.
* Strong documentation skills are necessary.
* Excellent written and verbal communication are necessary.
* Ability to use a calculator, computer and be familiar with word processing and spreadsheet programs.
*Physical Requirements:* * Ability to lift 25 pounds on an intermittent basis, bend, reach, push, pull, sit, twist, pinch, grasp, perform fine hand manipulation, operate a key board, and use a telephone.
*Additional Requirements:* * Ability to come to work every scheduled day, be on time and work overtime if authorized and necessary.
* Ability to wear hairnet, gloves, and personal protective equipment.
