Ideal Candidate: We are looking for an individual with at least 3 years of kitchen management experience, with a strong focus on seafood.
The ideal candidate has a supportive management style and fosters positive employee morale.
They are a hands-on leader who is driven and motivated by exceeding expectations, will have an extensive knowledge of food trends, and believes in the details that make up an exceptional dining experience.
Job Description:
- 50 hours per week, including weekends and holidays
- Oversees the production and successful execution of all menu items as detailed by the company.
- Responsible for all day-to-day operations of the kitchen.
Works closely with kitchen staff to ensure respective jobs are executed per company guidelines.
- Possesses skills necessary for completing and maintaining timely inventories; has experience calculating and managing proper food cost.
- Create and implement regulatory systems—scheduling, prep, breaks, temperature regulation, waste accounting, sanitation, attire, cleaning, etc.
- Report necessary kitchen repairs and maintenance
- Have clear, effective and professional communication skills, with the ability to diffuse tension and problem solve.
- Hiring and training—oversee and implement training schedule for all new employees.
- Ensure an organized, clean, and safe working environment while upholding company and health department guidelines.
- Expedite during peak business hours to ensure smooth kitchen flow, and that all orders are plated correctly and efficiently.
Qualifications:
- 3+ years kitchen managerial experience in a high-volume restaurant
- 5+ years line and prep experience in a high-volume restaurant
- Passionate and knowledgeable about seafood, up and coming food trends, and hospitality
- Detailed oriented, and committed to high food standards & quality control
- Highly energetic with a positive and collaborative management style
- Able to lead and inspire staff during busy and slow times, enjoys coaching and teaching
- Proficient in Excel and Word
- Bilingual in English/Spanish is preferred
- RBS and Food Safety Certified
