POSITION SUMMARY Under the direction of the Sous Chef with support from the Director of Culinary Services and Hospitality and Culinary Education and Hospitality Manager, and following established procedures, performs a Production Chef’s function.
Job performance contributes to the achievement of the goals of the Kneaded Culinary Academy and Kneaded Bakery and Catering.
Performance of the typical responsibilities and duties requires the ability to perform the job duties, involving job-related matters generally of limited to moderate complexity.
TYPICAL RESPONSIBILITES AND DUTIES: Works with Director, Catering Coordinator and Sous Chef to create a memorable experience for customers while training and leading apprentices.
Understands and responds to all guest needs in a timely and professional manner.
Helps in Monitoring supply inventory and does reordering and purchasing as needed for food and supplies from certified vendors approved by the agency.
Supports with making deliveries, receives payments, and turns in invoices to Catering Coordinator.
Fulfills production, set-up, and logistic obligations for bakery/catering customers and events; providing consistent food presentation while implementing the standards and protocols set forth by Kneaded Bakery & Catering and Rebekah Children’s Services.
Continuously works on research and development, recipe creation, and refinement to meet customer needs with support of Director of Culinary Services and Hospitality and Sous Chef.
Helps guide apprentices in preparing recipes to specified standards.
Works with Catering Coordinator, Culinary Education and Hospitality Manager, Sous Chef and Director in assessing the current strengths and weaknesses of the team and adjusts the plans of the department to reach department goals and needs.
Ensures the rotation of product in accordance with industry standards, including the FIFO method and regular seasonal menu rotations.
Supports management in keeping the kitchen fully equipped with necessary tools and equipment, ensuring the equipment is maintained and serviced by agency approved vendors.
Checks-in food product to ensure the correct quantities and items are received and that they are of the appropriate quality.
Ensures apprentices, students, and contractors are following food safety protocols and maintaining appropriate hygiene set forth by the Santa Clara Department of Environmental Health, Food and Drug Administration, and other regulatory groups.
Supports in guiding multiple apprentices and students; conducting team meetings and check-ins as needed.
Follows agency standards, HR protocols, and the employee handbook when disciplining employees.
Provides consistent food presentation while implementing standards and protocols set forth by Kneaded Bakery & Catering and Rebekah Children’s Services.
Leadership skills and the ability to motivate team members of diverse backgrounds.
Consistent verbal and written communication with apprentices, students, Sous Chef, Catering Coordinator, Culinary Education and Hospitality, Media and Marketing Coordinator and director.
Detailed knowledge of food preparation, proper food handling techniques, and the ability to implement/use an HACCP plan and MSDS Sheets.
Helps oversee production and expediting of food to ensure quality and consistency.
The ability to solve problems and work with complex deadlines to effectively manage the agency’s resources.
Maintains clean, safe kitchen and dining room which includes but is not limited to cleaning tables and chairs, restocking supplies, washing dishes, sweeping, and mopping floors according to Health Department regulations when required.

Activities might involve membership on a PQI committee or work group, service as a peer reviewer, data collection for PQI and evaluation purposes, completion of PQI questionnaires and surveys or participation in focus groups, or other activities as identified by PQI committees or work groups.
MINIMUM QUALIFICATIONS: License(s) Food Safety Manager Certification, or ability to obtain certification within 2 months of hire.
California driver’s license Schedule Must be available to work evenings, weekends etc.

EDUCATION, TRAINING AND EXPERIENCE: Three-five years related work experience and or degree in the Hospitality Industry.
Knowledge and Skills Ability to use kitchen equipment daily.
3-5 years related work experience and/or degree in the Hospitality Industry.
Ability to push, pull, lift, and/or carry up to 50 lbs.
Ability to hear sounds that may signal a hazardous situation in the kitchen, and ability to understand warnings from other staff regarding dangers in the kitchen.
Ability to sense odors which may signal a hazardous situation in the kitchen.
Ability to read, write, and understand English.
Ability to understand and follow instructions.
Basic knowledge of correct storage of food, supplies, and chemicals.
